Okay so I have everything up and running and unlocked then remapped the keys for my arcade mode then locked back. The problem is I can not seem to play any other games at all due to I can not figure out how to map my arcade to the buttons for each emulator. For example if I open the menu for a NES game then it shows me the controls and I can change the button under their controls but I can not add the buttons for my arcade? I am sure it is something simple or maybe not but I have tried everything and there is no option to map my arcade buttons to any of the other emulators except MAME for the arcade which works fine.

Hmm, so when you open the RetroArch menu like in case of your NES example, you can customize the controls but they don’t get saved?
Even if they are mapped by default to Xbox controllers you can change the controllers for all emulators.
If you aren’t there yet, try asking also in our Discord since other people with arcade cabs setups might be able to help also.

Kind of yes but no lol. When I go into change the controller mapping like for NES it shows only the options for the controller mapping they have to choose the buttons from, I can not seem to get to an actual mapping where I can change to my own buttons. I am pressing F something I believe but maybe there is another menu??

Try this:
To open RetroArch menu you can use F1 on keyboard or 2 thumb stick buttons on xbox controller.
main menu -> quick menu -> controls -> port 1 controls -> device type -> change anything then back and save core remap profile
is probably what you have tried
Other way:
Settings – input – port 1 controls – change any buttons you want for your arcade controller – save controller profile
