Hyperpie is just an addon for retropie, its basically “a skin” , hyperspin is for the PC or Android and not for the Pi, unsure what Steam ICE is but dont think its a Pi thing

Just check out the newer images, usually things get better and better as they get released, your suggestion of Virtualman one should be good to go ?
