Using 128GB Images on 120GB Drives - Arcade Punks

I have a few 120GB mSATA cards that I would like to use in USB enclosures with Pi4s.
Is it possible to edit a 128GB image file in Windows, like Wolfanoz_12K_Gold_128GB_RPi4 or CobaltoV7_PI4_128GB_8.1.1, by deleting some of the ROMs before imaging to the 120GB drive?
